The session will also cover cost analysis techniques, allowing attendees to calculate the financial benefits of incorporating past crop coffees in their offerings, ultimately maximizing profitability and minimizing waste. Sarah is the founder and operator of Tailwind Roasting Collaborative in Chicago. She has been in the specialty coffee industry for over 8 years with a passion for sustainable practices across the supply chain. She started her coffee journey in Colombia co-founding a social enterprise aimed at directly connecting producers with end consumers. From that time, she has had direct experience in most aspects of the industry, from café management, QC, wholesale, to green trading.
